Nutrition Education (1st Edition)
Dietary habits, which develop alongside a society's culture, may include practices that are harmful as well as those that are beneficial to nutrition and health. While insufficient and/or inaccurate nutrition knowledge can prevent individuals from making appropriate food choices, knowledge alone is not sufficient for healthy food selection and consumption. Interventions by all relevant stakeholders that take into account the determinants of food choice are thought to be effective in bringing about behavioral change. Successful nutrition counseling and education should have a thorough understanding of clients' decision-making mechanisms in food selection and use this knowledge to develop appropriate interventions.
